Heavily manured and stoney soil will cause carrots to fork, it’s also worth bearing in mind that certain varieties of carrot are short-rooted and rounded. I grow root veg such as carrots in deep raised beds using sieved soil that hasn’t been manured for at least a year, choosing a variety that is fairly long rooted. I do get a few forked carrots but in the main they are pretty good.
